Cornbread Tamale Casserole

This is a pretty easy casserole to put together. The hardest part is waiting for it to get done! Add a few chips, salsa, salad, and cold beer or a margarita, and you got a great meal!

  • ·
    1 lb. ground beef, cooked and drained
  • ·
    1 16-ounce can chili beans
  • ·
    ½ cup tomato sauce
  • ·
    2 teaspoons chili powder
  • ·
    ¼ teaspoon garlic powder
  • ·
    #2 ingredients:
  • ·
    1 cup yellow cornmeal
  • ·
    ½ teaspoon baking soda
  • ·
    ½ teaspoon salt
  • ·
    1 cup milk
  • ·
    2 eggs, beaten
  • ·
    1 14 ounce can cream style corn
  • ·
    2 cups of mexican style shredded cheese
  • ·
    1 4-ounce can green chilies, chopped
  • ·
    ½ cup chopped onions

How to Make Cornbread Tamale Casserole


  1. Heat oven to 350 degrees.
  2. Grease a rectangle (8x11.5x2) baking dish and sprinkle with yellow cornmeal.
  3. While cooking the hamburger, mix all of the #2 ingredients together in a bowl; set aside.
  4. After cooking and draining the hamburger, stir in the rest of the other #1 ingredients in with the hamburger; mix well.
  5. Pour ½ the cornbread batter( ingredients #2) into the prepared casserole dish.
  6. Add the meat mixture (ingredients #1) on top of that.
  7. Finish off with adding the rest of the cornbread batter on top of the meat mixture.
  8. Bake for40-45 minutes.
