¾ cup all-purpose flour
1½ teaspoons baking powder
½ teaspoon salt
1 teaspoon taco seasoning (add more if you want)
1 tablespoon of olive oil
1/3 cup milk
1 pound of hamburger, cooked and drained
1 cup of chunky salsa, mild or hot
1 cup of shredded nacho and taco cheese, or mexican cheese
2 cups of iceberg lettuce, chopped
½ cup of tomatoes, diced
1/3 cup of black olives, sliced or chopped
optional: garnish with sour cream or plain greek yogurt

How to Make Taco Pie

  • 1Preheat oven to 425 degrees.
  • 2Lightly grease an 8 or 9 inch pie plate and dust with cornmeal, coating entire inside of pie plate.
  • 3In a medium bowl, combine the cornmeal, flour, baking powder, salt, and taco seasoning.
  • 4Stir in the milk and olive oil. When cornbread mixture is combined, shape into a ball.
  • 5Place the ball of cornbread dough between 2 pieces of waxed paper, and roll out into about a 10 inch round.
  • 6Peel wax paper off of the top, and flip over the cornbread crust on top of the pie plate. Peel off bottom piece of wax paper, and shape crust into the pie plate.
  • 7Cook the hamburger until browned; drain off grease. Add the salsa to the hamburger and mix thoroughly.
  • 8Add the hamburger mixture into the pie crust and pat down the hamburger a bit to firm it up; sprinkle cheese over top of hamburger.
  • 9Bake for 15-18 minutes or until crust is brown and cheese is melted.
  • 10Remove from oven and cover the top of the pie with the chopped lettuce, tomatoes, and black olives. Slice pie; garnish with sour cream, if desired.
