Quick and easy. I served these with a packaged rice side dish. I think they would be good served on a soft tortilla with lettace and tomato. I also think you could serve these for a party, maybe put the meatballs in a crock pot with the sauce. Serve with sour cream and guaccomole.

Ingredients

  • 2 pounds ground beef
  • 2 1/2 cups prepared corn bread
  • 2 packages taco seasoning mix
  • 8 ounces tomato sauce
  • 1 1/2 cups taco sauce
  • - mexican cheese blend
  • 1 can (small) green chilis, drained

How To Make taco meatballs

  • Step 1
Crumble corn bread into large bowl. Add taco seasoning, 1/2 cup taco sauce, green chilis and ground beef. Mix well.
  • Step 2
Roll into meatballs. I made 26 large meatballs. Bake at 350 for 30 minutes. Drain off any excess fat.
  • Step 3
Mix tomato sauce and 1 cup taco sauce. Add more taco sauce for a little more flavor if desired. Pour over meatballs. Bake for another 20-5 minutes. Remove from oven and top with shredded cheese. Return to oven until cheese melts.
