sweet and sour meatloaf

Good comfort food at its best. I love this dish with macaroni and sharp cheddar cheese. I cook mine in a 13x9 baking pan. It cooks faster and is much easier to slice. Hope you enjoy. I'm spicy, so I put in a jalapeno in with the meat mixture.

Ingredients

  • - 1 1/2 lbs. ground chuck
  • - 1 cup dry bread crumbs
  • - 1 teaspoon salt
  • - 1/4 teaspoon pepper
  • - 2 eggs
  • - 1 teaspoon minced onion
  • - 15 oz. can tomato sauce, divided
  • TOPPING:
  • - reserved tomato sauce
  • - 2 tablespoons brown sugar
  • - 2 tablespoons apple cider vinegar
  • - 1/2 cup white sugar
  • - 2 teaspoons prepared mustard ( i use hot and spicy mustard)

How To Make sweet and sour meatloaf

  • Step 1
    Mix together beef, bread crumbs, salt, pepper and eggs. Add onion and one-half of tomato sauce. Put mixture in loaf pan.
  • Step 2
    Bake @350 for 50 minutes.
  • Step 3
    In saucepan, combine topping ingredients; bring to boil. Pour over meat loaf, bake 10 minutes more.
