Sweet and Sour Meatloaf

Good comfort food at its best. I love this dish with macaroni and sharp cheddar cheese.
I cook mine in a 13x9 baking pan. It cooks faster and is much easier to slice.
Hope you enjoy.

I'm spicy, so I put in a jalapeno in with the meat mixture.

Ingredients

  • ·
    1 1/2 lbs. ground chuck
  • ·
    1 cup dry bread crumbs
  • ·
    1 teaspoon salt
  • ·
    1/4 teaspoon pepper
  • ·
    2 eggs
  • ·
    1 teaspoon minced onion
  • ·
    15 oz. can tomato sauce, divided
  • TOPPING:

  • ·
    reserved tomato sauce
  • ·
    2 tablespoons brown sugar
  • ·
    2 tablespoons apple cider vinegar
  • ·
    1/2 cup white sugar
  • ·
    2 teaspoons prepared mustard ( i use hot and spicy mustard)

How to Make Sweet and Sour Meatloaf

Step-by-Step

  1. Mix together beef, bread crumbs, salt, pepper and eggs. Add onion and one-half of tomato sauce. Put mixture in loaf pan.
  2. Bake @350 for 50 minutes.
  3. In saucepan, combine topping ingredients; bring to boil. Pour over meat loaf, bake 10 minutes more.
