Sweet and Sour Meatballs

Simple to make and is perfect for a Ladies Luncheon or party. Serve up to 8 people so if you need more, just double the recipe.

Ingredients

1 1/2 lblean ground beef

1 can(s)(8-ozs) water chestnuts, drained and chopped

2eggs, slightly beaten

1/3 cplain dry bread crumbs

4 tspbeef-flavored instant bouillon
-
1 Tbspworcestershire sauce
-
1 cwater
-
1/2 cfirmly packed light brown sugar

1/2 clemon juice concentrate
-
1/4 cketchup
-
2 Tbspcornstarch
-
1/4 tspsalt
-
1 cdiced red and green bell peppers
-
·hot cooked rice
How to Make Sweet and Sour Meatballs
- In large bowl, combine meat, water chestnuts, eggs, crumbs, bouillon and Worcestershire sauce; mix well. Shape into 1 1/4" meatballs.
- In large skillet, brown meatballs. Remove from pan; pour off fat. In same skillet, combine remaining ingredients except pepper and rice; mix well. Over medium heat, cook and stir until sauce thickens. Reduce heat. Add meatballs; simmer uncovered 10 minutes.
- Add peppers; heat through. Serve with rice. Garnish with parsley if desired. Refrigerate leftovers.
