A traditional Scottish dish which can be made various ways using beef, lamb and sausages. I use slice sausage for this warming and comforting food.

Ingredients
- 2 medium onions chopped
- 450 grams beef sausage (slice)
- 1 1/2 kilograms floury potatoes (maris pipers) chopped in half
- 1 - cube beef stock
- - gravy granules if required
How To Make stovies

Step 1Place onions, sausages, potatoes and stock cube into a large pot. Cover with water and bring to the boil.

Step 2Lower the heat and simmer for 1 to 1 1/2 hours or until potatoes are starting to break up. Top up with water if the pot starts to look dry.

Step 3The dish is ready when everything is soft and the sauce is thick. Stir in some gravy granules, if the sauce is too thin. Season and enjoy.
