Ingredients
- 1-2 pound beef steak
- 1 package fajita seasoning, divided
- 1 tablespoon olive oil
- 1 small sweet onion, chopped
- 2 cloves garlic, minced
- 2 cups rice, cooked
- 1 can tomato with chilis
- 1/2 teaspoon cumin
- 1/2 teaspoon coriander
- 1/4 teaspoon cayenne pepper
- 4 ounces mexican melting cheese, shredded
- - tortillas, flour burrito size
- - sour cream
- - salsa
How To Make steak burritos

Step 1In a small bowl, combine olive oil and 1-2 tablespoons of the fajita seasoning to form a paste. Brush mixture on top of the steaks, set aside. Preheat oven 350 F

Step 2In a heavy sauce pan, on med -med high heat 1 tablespoon of olive oil. Add onion, salt, pepper and cook until softened. Add garlic and cook a minute more.

Step 3Stir in rice, tomatoes with chilies, cumin, coriander, the rest of the fajita seasoning and cayenne pepper. Simmer until almost all juices are gone. Stir in mexican melting cheese heat until totally melted.

Step 4Heat an cast iron skillet until just smoking. Add steaks and sear on both sides. Place in oven for 8 minutes or until desired temperature. Depending on thickness of steak. Let steak sit before slicing it into thin strips

Step 5On a warm tortilla, add sour cream, steak, cheddar cheese and cheesy rice mixture. Top with your favorite salsa and wrap it up in a burrito.
