I use a potato masher when browning my ground beef, and use a rolling pin on my ground corn chips (I gently roll the pin over the unopened bag).

Ingredients

  • 1 box Zatarains Spanish rice
  • 1 can Delmonte diced tomatoes w/basil, garlic & oregano
  • 1 can Mexican style corn, 11 oz
  • 1 cup Kraft shredded Mexican cheese blend
  • 2 bags Fritos corn chips, 1 oz each (snack size)
  • 1 pound ground beef

How To Make spanish rice with ground beef

  • Ground beef browning in a skillet.
    Step 1
    Brown and drain ground beef.
  • Corn added to ground beef.
    Step 2
    Add corn.
  • Rice and tomatoes cooking in a skillet.
    Step 3
    While ground beef is browning cook Spanish rice according to directions on box using the can of tomatoes.
  • Pouring beef, corn, and rice mixture into a baking dish.
    Step 4
    Add rice to ground beef mixture. Pour into sprayed 9 x 13 pan.
  • Cheese sprinkled over casserole.
    Step 5
    Sprinkle cheese over top.
  • Corn chips sprinkled over casserole.
    Step 6
    Add crushed corn chips (optional).
  • Casserole baking in the oven.
    Step 7
    Cook for 10 minutes at 350.
