Very easy recipe! So cheesy and Yummy. I catered my 25th class reunion in September and this was the 1st thing that they asked for. This is always eaten so fast that I don't have time to take a photo of the finish product. I will add it at a later date.

  • 2 lb
    ground beel
  • 16 oz
    large elbow macaroni
  • 1 lb
    velveeta cheese
  • 1 c
    each, bell pepper & onion (diced)
  • 16 oz
    half and half
  • 1 can(s)
    rotel tomatoes
  • 4 Tbsp
  • 8 oz
    shredded cheese

How to Make Southwest Mac with Beef


  1. Boil macaroni according to package instructions, drain, rinse with cold water and drain again. spread in a lasagna pan and set to the side.
  2. Brown ground beef with bell pepper and onion. Drain. Spread across the macaroni and set to the side.
  3. Preheat oven to 350.
  4. Add Velveeta (diced) and Rotel to a bowl and microwave for 3 minutes. Stir, add the butter, half & half and microwave for 5 minutes.
  5. Spread melted cheese mixture over the beef & macaroni and stir until all is mixed thoroughly.
  6. Top with shredded cheese and bake for 20 to 30 minutes. Serve.
