southwest mac with beef
Very easy recipe! So cheesy and Yummy. I catered my 25th class reunion in September and this was the 1st thing that they asked for. This is always eaten so fast that I don't have time to take a photo of the finish product. I will add it at a later date.

Ingredients
- 2 pounds ground beel
- 16 ounces large elbow macaroni
- 1 pound velveeta cheese
- 1 cup each, bell pepper & onion (diced)
- 16 ounces half and half
- 1 can rotel tomatoes
- 4 tablespoons butter
- 8 ounces shredded cheese
How To Make southwest mac with beef

Step 1Boil macaroni according to package instructions, drain, rinse with cold water and drain again. spread in a lasagna pan and set to the side.

Step 2Brown ground beef with bell pepper and onion. Drain. Spread across the macaroni and set to the side.

Step 3Preheat oven to 350.

Step 4Add Velveeta (diced) and Rotel to a bowl and microwave for 3 minutes. Stir, add the butter, half & half and microwave for 5 minutes.

Step 5Spread melted cheese mixture over the beef & macaroni and stir until all is mixed thoroughly.

Step 6Top with shredded cheese and bake for 20 to 30 minutes. Serve.
