Very easy recipe! So cheesy and Yummy. I catered my 25th class reunion in September and this was the 1st thing that they asked for. This is always eaten so fast that I don't have time to take a photo of the finish product. I will add it at a later date.

Ingredients

  • 2 pounds ground beel
  • 16 ounces large elbow macaroni
  • 1 pound velveeta cheese
  • 1 cup each, bell pepper & onion (diced)
  • 16 ounces half and half
  • 1 can rotel tomatoes
  • 4 tablespoons butter
  • 8 ounces shredded cheese

How To Make southwest mac with beef

  • Step 1
    Boil macaroni according to package instructions, drain, rinse with cold water and drain again. spread in a lasagna pan and set to the side.
  • Step 2
    Brown ground beef with bell pepper and onion. Drain. Spread across the macaroni and set to the side.
  • Step 3
    Preheat oven to 350.
  • Step 4
    Add Velveeta (diced) and Rotel to a bowl and microwave for 3 minutes. Stir, add the butter, half & half and microwave for 5 minutes.
  • Step 5
    Spread melted cheese mixture over the beef & macaroni and stir until all is mixed thoroughly.
  • Step 6
    Top with shredded cheese and bake for 20 to 30 minutes. Serve.
