I love slow cooked cuts of beef, they are very easy to make and come out melt-in-your-mouth tender.
I keep on experimenting with different ingredients every time. All of my "experiments" so far have turned out tasting good, and this one here is one of the best.

Ingredients

  • 2 Tbsp
    olive oil, extra virgin
  • 1 3/4 lb
    beef bottom round roast
  • ·
    salt and pepper
  • 1 1/2 tsp
    garlic, minced
  • 1 tsp
    beef stock
  • 1 c
    water
  • 3 Tbsp
    honey mustard
  • 1/2 c
    chopped onions
  • 1 can(s)
    mushroom pieces (optional)
  • 2 medium
    potatoes cut into 1" cubes (optional)

How to Make Slow Cooker Honey-mustard Pot Roast

Step-by-Step

  1. Sprinkle the roast on both sides with salt and pepper and garlic.
    In a frying pan over medium heat add the olive oil, and sear the roast on all sides.
  2. To the slow cooker add the stock, water, honey-mustard and the onions and stir to dissolve the stock and mustard.
    Move the roast with the pan drippings to the slow cooker, cover and cook on high for 5 hrs or low for 8 hrs.
  3. If you want; 1 hr before the end you can add the mushrooms and potatoes.
