Ingredients

2 Tbspolive oil
-
2 lbchuck roast - fat trimmed and cut into 1 1/2 inch cubes ( or can use stew meat )

saltsalt and pepper

·garlic powder
-
1 - 10 ozcream of mushroom soup
-
1 - 8 ozmushrooms, cleaned and sliced - optional - i didn't use this time

1 cdry sherry
-
1 pkgliptpn onion soup mix

1/2 - 1 tspthyme
-
1 clovegarlic, minced

1/2soup can water
-
1/2soup can sherry
-
·kluski noodles, prepared - you could use egg noodles or rice

- In the meantime, in a medium sized bowl, mix the soup with the onion soup,thyme, minced garlic and 1 cup of sherry.
Using empty soup can, fill halfway with Sherry and once beef is finished browning; deglaze the pan with the sherry, scraping all those yummy bits from the bottom of the pan.
Now, add a half can of water to the soup mixture and whisk. Pour the mixture into the pot with the beef, stir to combine.
Bring to a boil, then place lid on the pot and slow simmer for an hour or until beef is tender. Mine was ready in 1 hour. ( if adding mushrooms, do so when there is about 30 minutes left of cooking).
Taste the sauce, season more if needed.
