- 2 pounds top round lean beef, cubed
- 2 pounds yuca, peeled and cubed
- 2 medium butternut squash, peeled and cubed
- 2 large carrot, peeled and cubed
- 1 large spanish onion, diced
- 8 cups no salt added beef stock
- 2 tablespoons ground thyme
- 2 tablespoons kosher salt
- 1 teaspoon paprika
- 1/2 teaspoon chinese ginger powder
- 6 pinches fresh grated nutmeg
- 4 pinches ground cumin
- - cracked black pepper, to taste
