Ingredients

  • 4 pounds sweet potatoes, peeled and diced
  • 2 pounds top round lean beef, cubed
  • 2 pounds yuca, peeled and cubed
  • 2 medium butternut squash, peeled and cubed
  • 2 large carrot, peeled and cubed
  • 1 large spanish onion, diced
  • 8 cups no salt added beef stock
  • 2 tablespoons ground thyme
  • 2 tablespoons kosher salt
  • 1 teaspoon paprika
  • 1/2 teaspoon chinese ginger powder
  • 6 pinches fresh grated nutmeg
  • 4 pinches ground cumin
  • - cracked black pepper, to taste

  • Step 1
    Put all the vegetables and meat in the bottom of a slow cooker and pour in the stock.
  • Step 2
    Mix together the spices and stir into the slow cooker
  • Step 3
    Turn the slow cooker to low and cook for 8 hours.
