  • 4 lb
    sweet potatoes, peeled and diced
  • 2 lb
    top round lean beef, cubed
  • 2 lb
    yuca, peeled and cubed
  • 2 medium
    butternut squash, peeled and cubed
  • 2 large
    carrot, peeled and cubed
  • 1 large
    spanish onion, diced
  • 8 c
    no salt added beef stock
  • 2 Tbsp
    ground thyme
  • 2 Tbsp
    kosher salt
  • 1 tsp
  • 1/2 tsp
    chinese ginger powder
  • 6 pinch
    fresh grated nutmeg
  • 4 pinch
    ground cumin
  • ·
    cracked black pepper, to taste

How to Make Otoño Estofado de Carne (Autumn Beef Stew)


  1. Put all the vegetables and meat in the bottom of a slow cooker and pour in the stock.
  2. Mix together the spices and stir into the slow cooker
  3. Turn the slow cooker to low and cook for 8 hours.
