don't know where I got this recipe. I have had it a long time and is always a smash at potlucks and parties.

Ingredients

  • 8 oz
    macaroni cooked and drained
  • 1 lb
    ground beef browned
  • 1 medium
    onion
  • 1 pkg
    taco seasoning
  • 1 c
    salsa your choice
  • 1 medium
    green pepper diced
  • 3 clove
    garlic minced
  • 1 can(s)
    sweet corn drained
  • 1 c
    sour cream
  • 1 small
    jalapeno seeded and diced
  • 1 pkg
    dry onion soup mix
  • 1 can(s)
    cream of celery soup
  • 1 can(s)
    cheddar soup
  • 12 oz
    cheddar cheese shredded

How to Make Mexican Redneck Casserole

Step-by-Step

  1. Brown the beef and cook macaroni.
  2. In saucepan saute the onion, green pepper, garlic, and jalapeno in a little oil until tender
  3. Add remaining ingredients except cheese. Place in large baking pan. Bake at 350 degrees for 30 minutes. Top with cheese and return to oven until cheese is melted.
