don't know where I got this recipe. I have had it a long time and is always a smash at potlucks and parties.

Ingredients

  • 8 ounces macaroni cooked and drained
  • 1 pound ground beef browned
  • 1 medium onion
  • 1 package taco seasoning
  • 1 cup salsa your choice
  • 1 medium green pepper diced
  • 3 cloves garlic minced
  • 1 can sweet corn drained
  • 1 cup sour cream
  • 1 small jalapeno seeded and diced
  • 1 package dry onion soup mix
  • 1 can cream of celery soup
  • 1 can cheddar soup
  • 12 ounces cheddar cheese shredded

How To Make mexican redneck casserole

  • Step 1
    Brown the beef and cook macaroni.
  • Step 2
    In saucepan saute the onion, green pepper, garlic, and jalapeno in a little oil until tender
  • Step 3
    Add remaining ingredients except cheese. Place in large baking pan. Bake at 350 degrees for 30 minutes. Top with cheese and return to oven until cheese is melted.
