You can cut the tortillas to cover the lasagna if you like. Also you can garnish with fresh cilantro if desired.

Ingredients

  • 1 1/2 pounds lean ground beef
  • 1 package taco seasoning
  • 1 teaspoon seasoned salt
  • 1 cup diced tomatoes
  • 1(15 oz.) can tomato sauce
  • 1 (4oz.) can diced green chilies
  • 1 cup ricotta cheese
  • 2 - eggs
  • 10 - 6 inch corn tortillas
  • 2 1/2 cups (10 oz.) monterrey jack cheese, grated

How To Make mexican lasagna

  • Step 1
    In a large skillet, cook beef until done. Stir to break it up. Drain the fat.
  • Step 2
    Add taco seasoning, seasoned salt, tomatoes, tomato sauce and chilies. Blend well
  • Step 3
    Bring to a boil and reduce heat. Simmer uncovered 10 minutes.
  • Step 4
    In a small bowl, combine ricotta cheese and eggs.
  • Step 5
    In the bottom of a 9 x 13 inch baking dish, Spread half the meat mixture.
  • Step 6
    Spread half the ricotta mixture over that. Top with half the Monterrey Jack cheese.
  • Step 7
    Top with half the tortillas.
  • Step 8
    Repeat the layers ending with Monterrey Jack cheese.
  • Step 9
    Bake uncovered at 350 degrees for 30 minutes.
  • Step 10
    Let stand 10 minutes before cutting into squares.
