Ingredients

  • 1 cup butter
  • 1 cup white sugar
  • 4 - eggs
  • 1 can cream style corn
  • 1 can 4 oz. can chopped green chiles
  • 1/2 cup monterrey jack cheese, shredded
  • 1/2 cup cheddar cheese, shredded
  • 1 cup all purpose flour
  • 1 cup yellow cornmeal
  • 4 teaspoons baking powder
  • 1/4 teaspoon salt

How To Make mexican cornbread

  • Step 1
    Preheat oven to 300 degrees. Lightly grease baking dish or spray with Pam for baking. In a large bowl, beat together butter and sugar. Add eggs, beating in one at a time. Blend in Creamed corn, chilis and cheeses.
  • Step 2
    In a separate bowl, stir together flour, cornmeal, baking powder and salt. Add flour mixture to corn mixture, stir until smooth. Pour batter into prepared pan. Bake for one hour
