We love enchilada's but they are time consuming to make so occasionally I use this recipe. Note: I add 1 can Roto-Tel Tomatoes for extra flavors. I don't like black bean so add either Pinto Beans or Refried Beans.

lean ground beef
1 slice
1 can(s)
kernel corn (drained)
1 can(s)
black, pinto or refried beans (drained for black or pinto)
1 pkg
taco seasoning mix
8 to 12 corn tortillas
3/4 c
sour cream (you may use nonfat)
1/3 c
mexican blend shredded cheese
sliced jalapeno peppers

How to Make Mexican Beef Casserole


  • 1Brown Ground Beef & Onions & tomatoes together for about 10 to 12 Minutes-drain
  • 2Spray Baking Dish 1 Quart (8X12)
  • 3Place half of the tortillas in bottom.
  • 4Spoon half of beef mixture on top, place sour cream over beef. Then layer last tortillas & then beef mixture.
  • 5Place in heated 350 degree oven & bake for 25 minutes. Remove from oven & sprinkle with cheese & add sliced jalapeno peppers on top. Cook for another 5 minutes or till cheese is melted. Let stand for 5 minutes & serve.
