mexican beef casserole

We love enchilada's but they are time consuming to make so occasionally I use this recipe. Note: I add 1 can Roto-Tel Tomatoes for extra flavors. I don't like black bean so add either Pinto Beans or Refried Beans.

Ingredients

  • 1 pound lean ground beef
  • 1 slice onion
  • 1 can kernel corn (drained)
  • 1 can black, pinto or refried beans (drained for black or pinto)
  • 1 package taco seasoning mix
  • - 8 to 12 corn tortillas
  • 3/4 cup sour cream (you may use nonfat)
  • 1/3 cup mexican blend shredded cheese
  • - sliced jalapeno peppers

How To Make mexican beef casserole

  • Step 1
    Brown Ground Beef & Onions & tomatoes together for about 10 to 12 Minutes-drain
  • Step 2
    Spray Baking Dish 1 Quart (8X12)
  • Step 3
    Place half of the tortillas in bottom.
  • Step 4
    Spoon half of beef mixture on top, place sour cream over beef. Then layer last tortillas & then beef mixture.
  • Step 5
    Place in heated 350 degree oven & bake for 25 minutes. Remove from oven & sprinkle with cheese & add sliced jalapeno peppers on top. Cook for another 5 minutes or till cheese is melted. Let stand for 5 minutes & serve.
