mexican beef casserole
We love enchilada's but they are time consuming to make so occasionally I use this recipe. Note: I add 1 can Roto-Tel Tomatoes for extra flavors. I don't like black bean so add either Pinto Beans or Refried Beans.

Ingredients
- 1 pound lean ground beef
- 1 slice onion
- 1 can kernel corn (drained)
- 1 can black, pinto or refried beans (drained for black or pinto)
- 1 package taco seasoning mix
- - 8 to 12 corn tortillas
- 3/4 cup sour cream (you may use nonfat)
- 1/3 cup mexican blend shredded cheese
- - sliced jalapeno peppers
How To Make mexican beef casserole

Step 1Brown Ground Beef & Onions & tomatoes together for about 10 to 12 Minutes-drain

Step 2Spray Baking Dish 1 Quart (8X12)

Step 3Place half of the tortillas in bottom.

Step 4Spoon half of beef mixture on top, place sour cream over beef. Then layer last tortillas & then beef mixture.

Step 5Place in heated 350 degree oven & bake for 25 minutes. Remove from oven & sprinkle with cheese & add sliced jalapeno peppers on top. Cook for another 5 minutes or till cheese is melted. Let stand for 5 minutes & serve.
