melt in your mouth meatloaf
I will be honest, my family has never been a big fan of meatloaf. Sometimes you have to be creative and use different spices and ingredients to make something plain stand out. So this is my spin on meatloaf and although my family isn't a big fan of meatloaf, this recipe is one they actually like!

Ingredients
- 2 pounds lean ground beef
- 1 - 6 ounce package of stove top chicken stuffing mix
- 1 cup water
- 2 - eggs beaten
- 2 teaspoons chili powder
- 1 cup thick and chunky salsa ( divided )
- 1 cup shredded cheddar jack cheese
- 1/2 cup corn
- 1 cup barbecue sauce ( any flavor )
How To Make melt in your mouth meatloaf

Step 1Preheat oven to 375 degrees.

Step 2Mix all the ingredients except the bbq sauce, cheese and 1/2 cup of the salsa.

Step 3Shape into an oval loaf and place in a 9 x 13 baking dish. Top with bbq sauce and remaining salsa.

Step 4Bake 1 hour. Top with the cheese and bake for 5 more minutes until cheese is melted.
