hamburger casserole

I just made this recipe tonight from my 1941 New American Cook Book. I could just picture a family from 1941 sitting around the supper table enjoying this together. I imagine that people in this era liked time-saving meals too, because this was very, very easy and also very tasty. I think that this would be a great recipe for kids and a wonderful weeknight recipe. I'll definitely be making it again.

Ingredients

  • 2 tablespoons butter
  • 2 medium onions, coarsely chopped
  • 1 pound ground beef
  • 1 can tomato soup
  • 1 1/2 cups canned corn, drained
  • 1 cup mashed potatoes (i use a little more)
  • 1 large beaten egg yolk
  • - salt and pepper to taste

How To Make hamburger casserole

  • Step 1
    Preheat oven to 450 degrees. Spray a 3-quart casserole dish with cooking spray and set aside.
  • Step 2
    Melt butter in pan. Add meat and onions, sauté until brown, drain well. Add soup, corn, salt, pepper and mix thoroughly. Put into prepared casserole dish. Cover with mashed potatoes and brush top with egg yolk.
  • Step 3
    Bake for about 15-20 minutes or until top is browned and casserole is bubbly. Serve with rolls and your favorite veggies.
