I usually make this with fresh roasted green chiles but use canned when in a hurry or out of chiles.

diced green chiles
1 lb
cheddar cheese, shredded
2 Tbsp
chili powder
2 jar(s)
salsa, chunky
1 pkg
corn tortillas

How to Make Green Chile Enchilada Casserole


  • 1Preheat oven to 350 degrees. You will need a 9 x 13 pan.
  • 2Brown hamburger and onions. Drain . Add cream of chicken soup, green chiles, salsa, chili powder. Stir well.
  • 3In pan spread a thin layer of meat mixture on bottom of pan. Arrange on layer of tortillas ( about 6) then meat mixture, then cheese. Alternate ending with cheese.
  • 4cover with foil and bake approx. 30 minutes, Remove foil and bake another 15 minutes.
  • 5Serving suggestions: Can top with lettuce, tomatoes and sour cream. But great with out.
