I usually make this with fresh roasted green chiles but use canned when in a hurry or out of chiles.

  • 2 lb
    ground beef
  • 1 small
  • 2 can(s)
    cream of chicken soup
  • 1 can(s)
    diced green chiles
  • 1 lb
    cheddar cheese, shredded
  • 2 Tbsp
    chili powder
  • 2 jar(s)
    salsa, chunky
  • 1 pkg
    corn tortillas

How to Make Green Chile Enchilada Casserole


  1. Preheat oven to 350 degrees. You will need a 9 x 13 pan.
  2. Brown hamburger and onions. Drain . Add cream of chicken soup, green chiles, salsa, chili powder. Stir well.
  3. In pan spread a thin layer of meat mixture on bottom of pan. Arrange on layer of tortillas ( about 6) then meat mixture, then cheese. Alternate ending with cheese.
  4. cover with foil and bake approx. 30 minutes, Remove foil and bake another 15 minutes.
  5. Serving suggestions: Can top with lettuce, tomatoes and sour cream. But great with out.
