green chile enchilada casserole

I usually make this with fresh roasted green chiles but use canned when in a hurry or out of chiles.

Ingredients

  • 2 pounds ground beef
  • 1 small onion
  • 2 cans cream of chicken soup
  • 1 can diced green chiles
  • 1 pound cheddar cheese, shredded
  • 2 tablespoons chili powder
  • 2 jars salsa, chunky
  • 1 package corn tortillas

How To Make green chile enchilada casserole

  • Step 1
    Preheat oven to 350 degrees. You will need a 9 x 13 pan.
  • Step 2
    Brown hamburger and onions. Drain . Add cream of chicken soup, green chiles, salsa, chili powder. Stir well.
  • Step 3
    In pan spread a thin layer of meat mixture on bottom of pan. Arrange on layer of tortillas ( about 6) then meat mixture, then cheese. Alternate ending with cheese.
  • Step 4
    cover with foil and bake approx. 30 minutes, Remove foil and bake another 15 minutes.
  • Step 5
    Serving suggestions: Can top with lettuce, tomatoes and sour cream. But great with out.
