Favorite Cheesy Meatloaf

One of my favorite dishes to make on the weekend. With luck, there will be enough left for another night during the week or for lunches.

1 small
onion - chopped
2-3 clove
garlic - chopped
1 small
green bell pepper - (or a combo of red, green, yellow)
1 1/2 lb
lean ground beef
0.5 c
bread crumbs
1 large
0.25 c
grated parmesan cheese
1 tsp
oregano, dried (or to taste)
1 tsp
basil, dried (or to taste)
1 tsp
red peper flakes
1 tsp
2 slice
provolone cheese


1Put all ingredients (except for the sliced cheese) into a large bowl
2Mix together using hands. (Sorry, but the only way to really combine all of the ingredients in a meet loaf is to use your hands - they're washable)
3Turn the meat loaf mixture out onto a flat surface and pat, firmly, into a loaf shape, slightly smaller than the loaf pan you will be using. You will want to be very firm when shaping this - if you want it to hold together after baking. After shaping, turn it over and pat the other side together.
4Gently place into a loaf pan. If there is a little room between the pan and the loaf, that's OK - it will be easier to remove from the pan later.
5Bake at 350 degrees for about 50 minutes.
6Sprinkle top with parmesan cheese and place the provolone cheese slices diagonally across the top of the loaf. Bake a couple of more minutes, to get the cheese bubbly - watch closely so that the cheese doesn't burn, or liquefy and melt away (depending on what cheese you are using). You can also use a mixture of shredded cheddar, mozzarella and parmesan. sprinkled over the top.
