Ingredients
- 3 tablespoons all purpose flour
- - salt to taste
- - fresh ground black pepper to taste
- 3 pounds beef chuck, cut into 1-inch cubes
- 3 large carrots, peeled and sliced
- 1 medium onion, chopped
- 6 slices bacon, cooked and cut into 1-inch pieces
- 10 cans beef broth
- 2 cups red or burgundy wine
- 1 tablespoon tomato paste
- 2 cloves garlic, minced
- 3 sprigs fresh thyme, stemmed
- 1 - bay leaf
- 1 pound fresh mushrooms, sliced
- 2 large potatoes, cut into 1-inch pieces

Step 1Season flour with salt and pepper. Dredge meat cubes in the seasoned flour. Sear in a skillet on the stove top, then place in the crock-pot.

Step 2Add remaining ingredients to the crock-pot, cover, and cook until the meat is tender, 8-10 hours on low or 5-7 hours on high.
