onion soup mix
1/2 Tbsp
4 clove
garlic minced
1/2 c
red bell pepper chopped
1/2 c
green bell pepper chopped
1 c
spinach chopped fine
1/2 c
mushroom chopped fine
1 1/2 c
shredded Swiss cheese
1/4 c
fresh parsley finely chopped

How to Make Christmas Meat Roll


  • 1Mix the ground beef, ground pork, bread crumbs, eggs, 1/2 cup of tomato juice, onion soup mix, and salt. Set aside.
  • 2Place oil in pan. Saute the garlic, red bell pepper, green bell pepper and mushrooms until softened. Add the spinach and cook until wilted. Remove from heat and set aside.
  • 3Flatten out the meat into a large square on wax paper. Place the deli ham slices on top of meat. Spoon the veggies over top the ham. Sprinkle the cheese over top.
  • 4Using the wax paper roll the meat jelly roll style sealing the edges. Place seam side down on greased baking pan.
  • 5Bake at 350 degrees for about 45 minutes. Pour the other 1/2 cup tomato juice over top. Top with parsley and cook another 10 minutes.
  • 6Remove from oven and let rest 10 minutes and then cut into slices.
