chinese beef fried rice recipe

Found at Food Editorials.com for Culinary Quest 2014. I edited the recipe for personal tastes (i do not like peas, carrots or celery in my fried rice!). Cooking time does *not* include time to cook & chill rice.

Ingredients

  • 2 tablespoons soy sauce
  • 1/2 teaspoon sugar
  • 1 tablespoon vegetable oil
  • 2 - eggs, well beaten
  • 1/2 pound ground beef
  • 2 - scallions, chopped
  • 1 teaspoon fresh ginger, minced
  • 1 clove garlic, minced
  • 2 cups cooked rice, cold

How To Make chinese beef fried rice recipe

  • Step 1
    Combine soy sauce, sugar and salt and pepper to taste in a small bowl and set aside.
  • Step 2
    Heat oil in a heavy nonstick skillet over medium high heat. Cook eggs about 45 seconds, stirring constantly, until eggs are just set. Transfer eggs to a bowl and set aside.
  • Step 3
    Add ground beef and next 3 ingredients to same pan over medium heat. Sauté about 3 minutes, stirring often to break up meat, until browned.
  • Step 4
    Stir in ginger and garlic and cook 1 minute. Discard excess fat.
  • Step 5
    Increase heat to high and add rice. Stir-fry about 1 minute, until heated through.
  • Step 6
    Stir in soy sauce mixture and eggs and stir-fry 30 seconds longer. Enjoy!
