For YEARS I have HATED Meatloaf. Just the name; "Meatloaf" (the food not the singer) would make me GAG. But when I married my High School sweet heart, I decided to try and find the prefect "Meatloaf" recipe that would NOT make me gag. I think I have found it! I use LEAN 96/4 Ground Beef and Lean Ground Buffalo. Check it out.

Ingredients For buffa-loaf

  • 1 lb
    lean ground beef 96/4
  • 1 lb
    ground buffalo
  • 1 c
    chopped sweet onion
  • 1 c
    chopper sweet mini peppers
  • 2 c
    plain bread crumbs
  • 2 lg
    egg
  • 1/2 c
    catsup with balsamic vinegar ( heinz)
  • 6 oz
    tomato paste
  • 1 Tbsp
    worcestershire sauce
  • 1 tsp
    lemon pepper
  • 1 tsp
    kosher salt
  • 1/2 tsp
    dry mustard

How To Make buffa-loaf

    Preheat your oven to 370

    Chop sweet onion and mini sweet bell peppers. (Chop to your own eating preference)

    In a LARGE bowl; mix all ingredients together. I ALWAYS use my bare hands. Get in there and feel the ingredients. I feel by using your bare hands, that is the only way you can truly tell if all ingredients are properly mixed.

    Once well mixed; place meat mixture into a loaf pan.

    Place in oven and bake for 50 minutes. I do not add any substance on the top, i.e., extra catsup, tomato paste. The top will be a bit dry, but the loaf will be VERY moist. I like to have, standing by on my plate, a mixture of 1 tablespoon each; catsup and horseradish . I like to dip each bit into the mixture, gives it a little bit of a ZING!
