I found other stew recipes but none of them had enough flavor for me so I made up my own. (high sodium) but so good. Goes really well with Irish Soda Bread.

Ingredients
- 1 1/2 pounds beef stew meat
- 32 ounces beef broth
- 5 large potatoes, peeled and cubed
- 1 package french onion soup mix
- 4 cloves garlic, minced
- 1 large onion, cubed
- 2 teaspoons beef bullion
- 3 large carrots, peeled and sliced
- 3 - celery ribs, sliced
- 4 tablespoons cornstarch
- 2 - whole, bay leaves
- - seasoning to taste for the stew meat
How To Make beef stew

Step 1Brown stew meat (doesn't have to be cooked all the way through, it will finish cooking in the slow cooker) in a skillet with olive oil and seasoning (I use Nature's Seasoning Blend).

Step 2In a slow cooker add the potatoes, stew meat, onion, garlic, onion soup mix, broth, bullion, and bay leaves. Turn slow cooker on low for 4 to 6 hours.

Step 3An hour before ready to serve add the carrots, celery and cornstarch (this will sound funny but you want to dip a measuring cup into the hot broth so be careful just enough to make a paste with the cornstarch then add the paste into the slow cooker then stir if you don't do it that way it will be lumpy). Serve.
