1Brown stew meat (doesn't have to be cooked all the way through, it will finish cooking in the slow cooker) in a skillet with olive oil and seasoning (I use Nature's Seasoning Blend).
2In a slow cooker add the potatoes, stew meat, onion, garlic, onion soup mix, broth, bullion, and bay leaves. Turn slow cooker on low for 4 to 6 hours.
3An hour before ready to serve add the carrots, celery and cornstarch (this will sound funny but you want to dip a measuring cup into the hot broth so be careful just enough to make a paste with the cornstarch then add the paste into the slow cooker then stir if you don't do it that way it will be lumpy). Serve.
