I found other stew recipes but none of them had enough flavor for me so I made up my own. (high sodium) but so good. Goes really well with Irish Soda Bread.

Ingredients

  • 1 1/2 pounds beef stew meat
  • 32 ounces beef broth
  • 5 large potatoes, peeled and cubed
  • 1 package french onion soup mix
  • 4 cloves garlic, minced
  • 1 large onion, cubed
  • 2 teaspoons beef bullion
  • 3 large carrots, peeled and sliced
  • 3 - celery ribs, sliced
  • 4 tablespoons cornstarch
  • 2 - whole, bay leaves
  • - seasoning to taste for the stew meat

How To Make beef stew

  • Step 1
    Brown stew meat (doesn't have to be cooked all the way through, it will finish cooking in the slow cooker) in a skillet with olive oil and seasoning (I use Nature's Seasoning Blend).
  • Step 2
    In a slow cooker add the potatoes, stew meat, onion, garlic, onion soup mix, broth, bullion, and bay leaves. Turn slow cooker on low for 4 to 6 hours.
  • Step 3
    An hour before ready to serve add the carrots, celery and cornstarch (this will sound funny but you want to dip a measuring cup into the hot broth so be careful just enough to make a paste with the cornstarch then add the paste into the slow cooker then stir if you don't do it that way it will be lumpy). Serve.
