I found other stew recipes but none of them had enough flavor for me so I made up my own. (high sodium) but so good. Goes really well with Irish Soda Bread.

Ingredients

  • 1 1/2 lb
    beef stew meat
  • 32 oz
    beef broth
  • 5 large
    potatoes, peeled and cubed
  • 1 pkg
    french onion soup mix
  • 4 clove
    garlic, minced
  • 1 large
    onion, cubed
  • 2 tsp
    beef bullion
  • 3 large
    carrots, peeled and sliced
  • 3
    celery ribs, sliced
  • 4 Tbsp
    cornstarch
  • 2
    whole, bay leaves
  • ·
    seasoning to taste for the stew meat

How to Make Beef Stew

Step-by-Step

  1. Brown stew meat (doesn't have to be cooked all the way through, it will finish cooking in the slow cooker) in a skillet with olive oil and seasoning (I use Nature's Seasoning Blend).
  2. In a slow cooker add the potatoes, stew meat, onion, garlic, onion soup mix, broth, bullion, and bay leaves. Turn slow cooker on low for 4 to 6 hours.
  3. An hour before ready to serve add the carrots, celery and cornstarch (this will sound funny but you want to dip a measuring cup into the hot broth so be careful just enough to make a paste with the cornstarch then add the paste into the slow cooker then stir if you don't do it that way it will be lumpy). Serve.
