My family absolutely loves my enchiladas. Can adjust the heat of the dish by going a step up or down on the heat in the enchilada sauce. Great served with a salad and refried beans.

Ingredients For beef enchilada bake

  • 1 1/2 lb
    ground beef
  • 2 pkg
    taco seasoning
  • 1 can
    black olives (2.25 oz)
  • 2 md
    tomatoes
  • 1/2 lg
    onion
  • 1 can
    medium-hot enchilada sauce (28 oz)
  • 6
    soft taco size flour tortillas
  • 3 c
    shredded cheddar cheese
  • sour cream, to taste

How To Make beef enchilada bake

    Preheat oven to 350 degrees F.

    Prepare ground beef as directed on seasoning packages.
  • 3
    Drain olives and cut into quarters. Chop tomatoes. Chop onion. Place all 3 ingredients in a bowl and toss together; set aside.

    Spray or grease a 9x12 baking pan and put a thin layer of enchilada sauce on the bottom of the pan.

    Lay one of the tortillas flat and layer with prepared ground beef.

    Then the tomato mixture.

    Then a healthy amount of cheese.

    Roll the tortilla up and place it seam side down into the pan. Repeat the process until all six tortillas are filled.

    Carefully pour enchilada sauce over the top, covering each enchilada completely.

    Top with about 1 cup of cheese.

    Cover with foil and bake for 45 minutes. Serve with sour cream.
