I love the flavor of smoky-sweet BBQ on my burger. I made this recipe trying to find a nice BBQ burger that tastes great without all of the normal burger fixings. I don't like lettuce or pickles on my burger. I love the sharp and mild mix of the cheeses and the juiciness of the heirloom tomato. I feel that this is my best burger. My siblings agree with me.*;*

Where to even begin describing this scrumptious cheeseburger? The burger itself is great with the smoky flavor from the chipotles. Pairing cheddar and Gouda cheese is great and adds to the smoky flavor. Then, that chipotle mayo tops the burger adds one last flavor punch.

Ingredients For bbq bacon cheeseburger w/chipotle mayo

  • 1 lb
    ground beef
  • 1 lb
    ground veal
  • 1 Tbsp
    minced onion
  • 1 Tbsp
    minced garlic
  • salt and pepper
  • 2
    chipotle pepper (diced)
  • 6
    buns (your preference)
  • 1 lg
    heirloom tomato
  • 1/2
    sweet onion (sliced)
  • 6 slice
    Gouda cheese
  • 6 slice
    sharp cheddar cheese
  • 12 slice
    bacon
  • 16 oz
    sweet BBQ sauce
  • CHIPOTLE MAYO
  • 1 c
    mayo
  • 1 Tbsp
    sweet BBQ sauce
  • 1 Tbsp
    Caribbean jerk season or sauce
  • 1
    chipotle pepper (diced)

How To Make bbq bacon cheeseburger w/chipotle mayo

  • Combining the meat and seasonings.

    Take the ground meats and season with salt & pepper (to taste). Add the onion, garlic, and chipotle peppers.
  • Meat formed into 6 patties.

    Shape the meat into six 1/3 lb patties.
  • Grilling the burgers.

    Take the patties and the bacon and place them on the grill. **I like to use a charcoal grill with pecan and applewood but a propane grill can be used also.**
  • Mayo in a measuring cup with sliced onion and tomatoes.

    As your meat cooks, make your mayo and slice your onion and tomato. MAYO: Take all the ingredients for the mayo and mix them together.
  • Toasting the buns.

    When your meat is done set it aside to rest while you toast your buns.
  • An assembled BBQ Bacon Cheeseburger With Chipotle Mayo.

    Take the bottom bun and spread on the mayo, top the mayo with a slice of Gouda and then the slice of cheddar. Add the meat, tomato, onion and spread BBQ sauce on the top bun and top off the burger.
