I had originally found this recipe via Paula Deen. It is a wonderful meatloaf for kids and picky eaters. I usually double this recipe because we both love this meatloaf and want left overs! This is the ONLY meatloaf I make these days!

yield 1-2 serving(s)

Ingredients

  • 1 pound ground chuck
  • 10 slices bacon, cooked and crumbled
  • 1 package (8 ounce) sharp cheddar, grated
  • 2 large eggs, lightly beaten
  • 1/4 cup bread crumbs, toasted
  • 1/4 cup mayonnaise
  • 1 tablespoon worcestershire sauce
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/3 cup ketchup
  • 2 tablespoons prepared mustard
  • 1 can (3 ounces) french fried onions

How To Make bacon cheeseburger meatloaf

  • Step 1
    Preheat oven to 350 degrees
  • Step 2
In a large bowl, combine the ground chuck and the next 8 ingredients, mixing well.
  • Step 3
In a small bowl, combine the ketchup and mustard. Stir 1/4 cup ketchup mixture into meat mixture, reserving the remaining ketchup mixture.
  • Step 4
Press meat mixture into a 9x5x3 inch loaf pan or shape into a loaf and place on a rack on a broiler pan. Spread remaining ketchup mixture over the loaf. Bake 40 minutes. Top with French fried onions, bake another 10-15 minutes or until meat is no longer pink.
  • Step 5
COOKS TIPS: I leave the onions off as I am allergic. You can use any kind of mustard you want, I use yellow and sometimes spicy brown. Use any kind of cheese you have on hand as well. I have doubled this recipe and instead of using 2 pounds of ground beef have added 1 pound ground pork.
