I had originally found this recipe via Paula Deen. It is a wonderful meatloaf for kids and picky eaters. I usually double this recipe because we both love this meatloaf and want left overs! This is the ONLY meatloaf I make these days!

Ingredients

1 lb
ground chuck
10 slice
bacon, cooked and crumbled
1 pkg
(8 ounce) sharp cheddar, grated
2 large
eggs, lightly beaten
1/4 c
bread crumbs, toasted
1/4 c
mayonnaise
1 Tbsp
worcestershire sauce
1/4 tsp
salt
1/4 tsp
ground black pepper
1/3 c
ketchup
2 Tbsp
prepared mustard
1 can(s)
(3 ounces) french fried onions

How to Make Bacon Cheeseburger Meatloaf

Step-by-Step

  • 1Preheat oven to 350 degrees
  • 2In a large bowl, combine the ground chuck and the next 8 ingredients, mixing well.
  • 3In a small bowl, combine the ketchup and mustard. Stir 1/4 cup ketchup mixture into meat mixture, reserving the remaining ketchup mixture.
  • 4Press meat mixture into a 9x5x3 inch loaf pan or shape into a loaf and place on a rack on a broiler pan. Spread remaining ketchup mixture over the loaf. Bake 40 minutes. Top with French fried onions, bake another 10-15 minutes or until meat is no longer pink.
  • 5COOKS TIPS: I leave the onions off as I am allergic. You can use any kind of mustard you want, I use yellow and sometimes spicy brown. Use any kind of cheese you have on hand as well. I have doubled this recipe and instead of using 2 pounds of ground beef have added 1 pound ground pork.
