two-crusted pizza

I don't remember where I copied this recipe from. When I first got married I was a recipe collector, clipping and copying everything that looked good. I'm glad I copied this one! You can make it your own by adding your favorite meats or veggies, even your own pizza sauce even though one is included. The whole family loves it. It is a little work with making your own crust but worth every minute of it!

Ingredients For two-crusted pizza

  • 1 Tbsp
    or 1 envelope active dry yeast
  • 1 c
    lukewarm water
  • 2 Tbsp
    vegetable oil or olive oil (your preference)
  • 1 tsp
    salt
  • 2 3/4 c
    unbleached flour
  • 1 can
    1lbs. 12oz. italian plum tomatoes
  • 3 oz
    tomato paste
  • 1-2 clove
    garlic, crushed
  • 2 tsp
    oil (preference evoo)
  • 1 lb
    mozzarella cheese, shredded
  • 8 oz
    fresh mushrooms, sliced
  • 1
    green pepper, chopped, sliced or round
  • 2 clove
    garlic (optional)
  • 2 oz
    grated parmesan cheese

How To Make two-crusted pizza

    First thing make your pizza dough. Sprinkle the yeast in the warm water, let it stand until dissolved. Add the 2 Tbs. of oil, salt and half of the flour, beating well. Gradually add the rest of the flour to form a soft dough.

    Turn out on a floured board; knead until smooth and elastic, about 10 minutes. Turn dough in a greased bowl, cover with a damp towel or plastic wrap. Let rise in a warm place until doubled, about 1 1/2 hours.

    Meanwhile make the tomato sauce. Combine the tomatoes, tomato paste,the garlic and the oil in a sauce pan. Simmer until thick, about 20 minutes. Stirring often. Add herbs to your taste. Oregano, Basil, Parsley,or Italian seasoning. Set aside to cool while the dough is rising.

    When the dough has risen punch it down and turn it on a floured board or counter. Divide into two balls, one larger than the other one. Roll the larger ball to fit into a 12" pizza pan 1" deep. Leave a slight over hang.

    Spread the bottom with mozzarella, top with half the muchrooms and green pepper. At this point you can add extra ingredients. I added chopped, cooked bacon bits. Chopped, stemmed spinach is good! Add the 2 cloves of garlic if you want, minced. Sprinkle with the parmesan cheese.

    Roll out the other ball of dough. Fold the edges over with the bottom crust and pinch to make a standing rim. Bake near the bottom of a preheated 450 degree oven for 7 minutes. Remove from the oven and add tomato sauce, remaining mushrooms and green peppers. At this point I added large pepperoni and more bacon bits, plus I sprinkled mozzarella on top (I didn't add the whole amount to the middle). Sprinkle with seasonings if desired.

    Return to the oven and bake at 400 degrees about 25 minutes until pizza is golden brown and set. If the edges brown too fast cover with foil. Remove from the oven and let set 10 minutes before cutting.

    Store bought pizza sauce could also be used.
