tortellini soup

I have no idea where Mom got this recipe, but the whole family love love loved it!!!

Ingredients

  • 1 pound italian sausage, no casings
  • 1 cup onion, coarsely chopped
  • 2 cloves garlic, sliced
  • 5 cups beef broth
  • 1/2 cup water
  • 1/2 cup dry red wine or water
  • 2 cups tomatoes (or 4 medium chopped, seeded, peeled tomatoes)
  • 1 cup carrots, thinnly sliced
  • 1/2 teaspoon basil
  • 1/2 teaspoon oregano
  • 8 ounces (1 can) tomato sauce
  • 1 1/2 cups zucchini (mom said she used canned if she had to)
  • 8 ounces cheese filled tortellini
  • 3 tablespoons parsley
  • 1 medium green pepper, cut in to 1/2 pieces. (i omit cuz i don't like green pepper!!)
  • - grated parmesan cheese

How To Make tortellini soup

  • Step 1
    If you use sausage that came in a casing, remove.
  • Step 2
    In a 5 quart dutch oven, brown the sausage. Remove the sausage, but keep about 1 tablespoon of the drippings in the dutch oven.
  • Step 3
    Saute the onions & garlic in the sausage drippings in the dutch oven until the onions are tender.
  • Step 4
    Add beef broth, water/wine, tomatoes, carrots, basil, oregano, tomato sauce & sausage. Bring to a boil. Reduce heat and simmer uncovered for 30 minutes (savor the aroma!!)
  • Step 5
    Stir in zucchini, tortellini, parsley, & green pepper. Cover and simmer for an additional 35-40 minutes or until the tortellini are tender.
  • Step 6
    When serving, sprinkle with the grated parmesan cheese, if desired. (I skip this!) Serve with yummy warm crusty bread or bread sticks!
