Our friend, Gary, gave me this recipe. I add in extra cheese and fresh basil from the garden. Also I added garlic. I will post as original and add in ( ) my additions. This makes a great appetizer or a nice luncheon for the gals.

Ingredients
- 1 - baked and cooled pie crust
- 2 cups (shredded mozzarella)
- 1 cup shredded parm cheese
- - (salt and pepper to taste on the tomatoes)
- - (fresh basil leaves to taste)
- - (fresh minced garlic to taste)
- 2 - large tomatoes slice thick (sprinkle with a little garlic powder)
- 1 cup mayonnaise
- 2 cups extra sharp cheese (we use a 2 cup package of cabot's seriously sharp)
How To Make tomato pie

Step 1In the pie crust add half of your parm and half of your mozzarella. Top with the tomatoe slices, sprinkle with your minced garlic and layer on your basil leaves.

Step 2Top the tomatoes with the rest of the parm. Mix the extra sharp cheese and mayo together and spread over the tomatoes. Top with remaining mozzarella and bake.

Step 3Bake at 375 for 20 minutes.
