This makes a great appetizer or a nice luncheon for the gals.
1baked and cooled pie crust
2 c(shredded mozzarella)
1 cshredded parm cheese
·(salt and pepper to taste on the tomatoes)
·(fresh basil leaves to taste)
·(fresh minced garlic to taste)
2large tomatoes slice thick (sprinkle with a little garlic powder)
2 cextra sharp cheese (we use a 2 cup package of cabot's seriously sharp)
How to Make Tomato Pie
- In the pie crust add half of your parm and half of your mozzarella. Top with the tomatoe slices, sprinkle with your minced garlic and layer on your basil leaves.
- Top the tomatoes with the rest of the parm. Mix the extra sharp cheese and mayo together and spread over the tomatoes. Top with remaining mozzarella and bake.
- Bake at 375 for 20 minutes.
