Our friend, Gary, gave me this recipe. I add in extra cheese and fresh basil from the garden. Also I added garlic. I will post as original and add in ( ) my additions.
This makes a great appetizer or a nice luncheon for the gals.

Ingredients

baked and cooled pie crust
2 c
(shredded mozzarella)
1 c
shredded parm cheese
(salt and pepper to taste on the tomatoes)
(fresh basil leaves to taste)
(fresh minced garlic to taste)
2
large tomatoes slice thick (sprinkle with a little garlic powder)
1 c
mayonnaise
2 c
extra sharp cheese (we use a 2 cup package of cabot's seriously sharp)

How to Make Tomato Pie

Step-by-Step

  • 1In the pie crust add half of your parm and half of your mozzarella. Top with the tomatoe slices, sprinkle with your minced garlic and layer on your basil leaves.
  • 2Top the tomatoes with the rest of the parm. Mix the extra sharp cheese and mayo together and spread over the tomatoes. Top with remaining mozzarella and bake.
  • 3Bake at 375 for 20 minutes.
