My family made dozens of these wraps daily at our family owned pizza shop. They were a big hit with or without sausage.

Ingredients

  • 4 sheets 8" flour wraps
  • 1 pound ricotta cheese
  • 1 tablespoon grated cheese
  • 1 - egg
  • dash salt, pepper, garlic powder, onion powder, parsley flakes
  • 1 box frozen chopped spinach, thawed and drained
  • 1/2-1 pound bulk sausage, browned
  • 1 cup mozzarella cheese

How To Make spinach wrap

  • Step 1
    Mix ricotta, grated cheese, egg and seasonings together. Pre-heat oven to 400 degrees. Line sheet pans with parchment paper. Place wraps on lined sheet pans.
  • Step 2
    Spread ricotta mixture on wraps and then top with drained spinach. If you want to add the sausage do so now. Top with mozzarella.
  • Step 3
    Bake at 400 degrees until it starts to brown. Roll up on waxed paper or parchment. Just something to hold it together while you eat so it doesn't drip on you.
