Ingredients

  • - yolks of 4 large eggs
  • - 1/2 cup heavy cream
  • - 1/3 cup freshly grated parmesan cheese
  • - 1/4 cup chopped fresh parsley
  • - 1/4 tsp. salt
  • - 1/4 tsp. black pepper
  • - 10 slices bacon, chopped (8 oz)
  • - 1 large clove garlic, crushed
  • - 1 pkg. thin spaghetti, 16 oz
  • - 3 tbsp. margarine
  • - more freshly grated parmesan cheese, optional

How To Make spaghetti carbonara

  • Step 1
    In large keep pot, over high heat, bring 2 quarts water covered to boil, 8 to 10 minutes. Meanwhile, in medium bowl, with wire whisk or fork, beat egg yolks, cream, 1/3 cup Parmesan, parsley, salt and pepper til well mixed. Set aside. In deep skillet over medium high heat, cook bacon and garlic about 10 minutes; stir frequently til bacon is browned and crisp. While bacon is cooking, add spaghetti to boiling water; cook about 8 minutes. Stir frequently til tender. Drain spaghetti; add to bacon in skillet along with butter. Toss to coat well. Remove from heat; add egg yolk mixture; toss to mix well. Sprinkle with more grated cheese if desired. Serves 6 to 8 My Old Recipes
