skillet lasagna
This is one of the most requested meals to make from my children and the most requested recipe asked to share with friends. So now I will share it with everyone! I would rather have this than regular lasagna. Others say the same. One friend who took the recipe down and made it for her boys told me she had to make it twice a week for a month as her boys kept asking for it.

You'll make this skillet lasagna again and again because it will be a requested meal in your house. It has all the flavor of a lasagna without all the work. Lasagna noodles are cooked in a thick meat sauce to make this a wonderful one-pot meal. The skillet lasagna is topped with a cheesy mixture that adds the yummy gooeyness you want in a lasagna. If you like a little spice, try using Italian sausage. You could even substitute ricotta with cottage cheese if you prefer.
Ingredients
- 1 pound ground beef
- 1/2 pound mild Italian sausage
- 1/2 cup chopped green pepper
- 1/4 cup chopped onion
- 1 jar tomato & basil pasta sauce (your favorite, 24 oz)
- 1 cup water
- 6 - uncooked lasagna noodles broken into 2-inch pieces
- 12 ounces small curd cottage cheese
- 1/2 cup grated Parmesan cheese
- 1 tablespoon dried parsley
- 1 large egg
- 2 cups shredded Italian blend cheese
How To Make skillet lasagna

Step 1In a large skillet cook ground beef and Italian sausage. Halfway through add the green peppers and onion. Cook until meat is cooked through and onions are clear. Drain.

Step 2Stir in pasta sauce, water, and broken lasagna noodles.

Step 3Reduce heat to medium-low and cover with a lid. Cook for 20 - 25 minutes. Stir occasionally until the pasta is almost tender.

Step 4Meanwhile, in a small bowl, mix cottage cheese, Parmesan, parsley, and egg.

Step 5Spread over partially cooked meat mixture.

Step 6Sprinkle with the shredded cheese.

Step 7Cover again and cook 10 - 15 minutes longer or until the cottage cheese mix is set and the pasta is tender.
