Ingredients
- 2 medium eggs, beaten
- 1/4 cup soft bread crumbs
- 1/2 cup tomato juice
- 2 tablespoons parsley
- 1/2 teaspoon oregano, dried
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 medium garlic clove, minced
- 2 pounds lean ground beef
- 8 slices boiled ham, thinly sliced
- 6 ounces mozzarella cheese, shredded
- 3 slices mozzarella cheese
How To Make sicilian meat roll

Step 1Combine eggs, crumbs, juice, parsley, oregano, salt, pepper and garlic.

Step 2Add beef and mix well.

Step 3On waxed paper or foil, pat meat into a 12x10 rectangle.

Step 4Arrange ham slices atop meat leaving a small margin around the edges.

Step 5Sprinkle shredded cheese over the ham.

Step 6Starting from narrow end of the rectangle, roll up the meat using the paper (or foil) to lift.

Step 7Seal edges and ends.

Step 8Place roll seam side down on a 13x9x2in baking pan.

Step 9Bake at 350 for one hour and fifteen minutes or until done.

Step 10Note: Center of roll will be pink due to colouration from ham slices.

Step 11Cut three slices of mozeralla cheese diagonally and place them on top of the roll.

Step 12Return to oven until cheese melts, approx 5 minutes.

Step 13Also delicious served cold or in sandwich breads.
