Ingredients

  • 1 small
    red bell pepper, diced
  • 1 small
    zucchini, thickly sliced
  • 1 small
    yellow squash, thickly sliced
  • 1 small
    red onion, thickly sliced
  • VINAIGRETTE INGREDIENTS

  • 1 Tbsp
    oil
  • 1 Tbsp
    red wine vinegar
  • 1 tsp
    italian seasoning
  • 5/8 tsp
    pepper
  • PIZZA INGREDIENTS

  • 4
    italian bread shells
  • 1/2 c
    mozzarella cheese, shredded
  • 2 Tbsp
    parmesan cheese, grated

How to Make Roasted Vegetable Pizzas

Step-by-Step

  1. Heat oven to 450. In a large bowl, combine all vegetables.
  2. In small bowl, combine all vinaigrette ingredients; mix well.
  3. Pour over vegetables; toss gently to coat.
  4. Place in ungreased 15x10x1" baking pan.
  5. Bake at 450 for 10 minutes.
  6. Meanwhile, place bread shells on ungreased cookie sheet.
  7. Stir vegetables; spoon onto shells.
  8. Bake at 450 for 4 to 6 minutes or until vegetables are tender and bread shells are hot.
  9. Sprinkle mozzarella and parmesan cheese over vegetables.
  10. Bake an additional 2 to 3 minutes or until cheese is melted.
