Ingredients
- 1 small red bell pepper, diced
- 1 small zucchini, thickly sliced
- 1 small yellow squash, thickly sliced
- 1 small red onion, thickly sliced
- VINAIGRETTE INGREDIENTS
- 1 tablespoon oil
- 1 tablespoon red wine vinegar
- 1 teaspoon italian seasoning
- 5/8 teaspoon pepper
- PIZZA INGREDIENTS
- 4 - italian bread shells
- 1/2 cup mozzarella cheese, shredded
- 2 tablespoons parmesan cheese, grated
How To Make roasted vegetable pizzas

Step 1Heat oven to 450. In a large bowl, combine all vegetables.

Step 2In small bowl, combine all vinaigrette ingredients; mix well.

Step 3Pour over vegetables; toss gently to coat.

Step 4Place in ungreased 15x10x1\" baking pan.

Step 5Bake at 450 for 10 minutes.

Step 6Meanwhile, place bread shells on ungreased cookie sheet.

Step 7Stir vegetables; spoon onto shells.

Step 8Bake at 450 for 4 to 6 minutes or until vegetables are tender and bread shells are hot.

Step 9Sprinkle mozzarella and parmesan cheese over vegetables.

Step 10Bake an additional 2 to 3 minutes or until cheese is melted.
