Yummy and easy! Can be easily adapted for vegetarians as well! And yes, I know it is easy to just open a can of spaghetti sauce and pour over, but I always feel so much better about dinner if it is not entirely from boxes and cans! Maybe one day I can post my goat cheese ravioli recipe that goes amazing with this.

Ingredients For ravioli in tomato basil sauce

  • 1 can
    family size tomato soup
  • 1 can
    tomato paste
  • 3 Tbsp
    fresh basil, chopped fine
  • 2 clove
    garlic, minced
  • 1 1/2 tsp
    italian seasoning
  • 1/4 c
    finely diced onion
  • 1/4 c
    finely diced bell pepper
  • 1/2 c
    sun dried tomatoes
  • salt and pepper to taste
  • 1/2 pkg
    frozen mini beef ravioli
  • 1/2 pkg
    frozen mini cheese ravioli

How To Make ravioli in tomato basil sauce

    Thaw or cook the frozen ravioli. In the meantime in a saucepan, mix the tomato soup, tomato paste, basil, garlic and seasoning. Bring to a low simmer and add onions, peppers and tomatoes. Cook on a low until the onions are soft. Taste and add salt and pepper if desired. I like this dish sweet so use it very sparingly.

    Pour over cooked ravioli and sprinkle with Parmesan cheese.
