Ingredients

  • 3 cloves garlic, finley grated
  • 1/2 cup onions, chopped
  • 3 tablespoons olive oil
  • 1 cup green bell peppers, diced
  • 2 1/2 pounds eggplant,unpelled and diced
  • 2 1/2 pounds zucchini,sliced 1/4 inch
  • 1 can 28 oz crushed tomatoes,undrained
  • 1 1/2 teaspoons basil, dried
  • 1 1/2 teaspoons italian seasoning
  • 1 1/2 teaspoons salt
  • 1 pound mushrooms whole
  • 1 1/2 pounds italian sausage (your choice sweet or hot)
  • 8 ounces swiss cheese,grated
  • - black pepper, to taste

How To Make ratatouille with sauce

  • Step 1
    Saute garlic and onions in oil until soft.
  • Step 2
    Add green pepper,eggplant,zucchini;cook5 minutes over medium heat,tossing well.
  • Step 3
    Add undrained tomatoes and seasonings. Simmer 15 minutes;cover and simmer 15 more minutes.
  • Step 4
    Add mushrooms to vegetables during last 10 minutes of cooking time. Meanwhile, cook Italian sausage in skillet until done and drain well. (I like it in Crumbles some like it in slices. if in links I cut into slices after cooked.)
  • Step 5
    Add sausage to vegetables; sprinkle with grated cheese. cover and simmer until cheese melts. Serve
