I wanted something fast to make last night and my friend said she was making a veggie pizza which gave me a great idea also! And here it is! Delish!

Ingredients
- 1 large roasted red peppers
- 1/2 cup pitted green olives or calamata olives
- 1/2 cup atrichoke hearts
- 1/2 cup fire roasted tomatoes
- 1/2 cup parmesan cheese
- 1/2 cup mozarella cheese
- 1 large boboli whole wheat pizza crust
How To Make quick and easy veggie pizza

Step 1Coat the pizza crust with olive oil; cut roasted red pepper into thin strips and spread over pizza; cut olives into halfs and cover pizza;

Step 2Cut artichoke hearts and spread over pizza; do the with the fire roasted tomatoes

Step 3Top with mozarella and parmesan cheese; bake in 450 degree overn for 10 to 15 minutes. Enjoy!

Step 4For easier prep time; I pick up a small container of all the ingredients; the red pepper, tomatoes, olives and artichoke hearts at the salad bar at my local grocery store or at the olive bar by the deli and instead of using olive oil I use the oil from that's collected when I picked up the ingredients from the olive bar. You can use any veggies you want.
