not quite your wise guy spaghetti sauce

Years ago the Sicilian owners of a nail shop gave me their family sauce recipe. I've changed it over the years to my own tastes. Their recipe was olive oil, garlic,hot pepper flakes, tomatoes and cheese. The rest is mine. Sauce is a family thing, but this one has just the right sweet/hot ratio for me.

Ingredients

  • 28 ounces best quality canned tomatoes or fresh romas, skinned and seeded
  • 1/4 cup olive oil
  • 4 cloves garlic
  • 1 tablespoon hot pepper flakes
  • 2/3 cup finely diced onion
  • 1 pinch salt
  • 1 teaspoon pepper
  • 1 teaspoon oregano or 2 tbsp fresh
  • 1 teaspoon parsley, or 2 tbsp fresh
  • 2/3 cup drinkable red wine
  • 2/3 cup good quality parmesan cheese
  • 1 tablespoon sugar (optional) depending on sweetness of tomatoes

How To Make not quite your wise guy spaghetti sauce

  • Step 1
    Warm the olive oil in a saute pan and add the onions, cooking gently until translucent. Add red pepper flakes, salt and pepper, tomatoes.
  • Step 2
    Using a microplane grate the garlic into the mix.Add dried herbs if using. If using fresh, delay.
  • Step 3
    Simmer slowly checking every 30 minutes or so until most of the liquid is evaporated and the sauce is quite thick. Add wine.
  • Step 4
    Continue the simmer until sauce has thickened to the right consistency. Usually about 2 hours in total.
  • Step 5
    Shut off heat, add the cheese, any fresh herbs, and taste for sweetness and add sugar if desired.
  • Step 6
    Best if you can let this sit for a hour or two. Reheat slowly, adding meatballs if desired.
