I love cooking different dishes, and I made this my own due to my taste. If you don't care for the traditional manicotti, or just want something a little different, give this one a try.

Ingredients

  • 10 - manicotti shells, uncooked
  • 1/2 pound each of pork sausage, italian sausage, and lean ground beef
  • 1 cup red & green peppers mixed, chopped fine
  • 1 medium red onion, chopped fine
  • 2 large eggs
  • 2 teaspoons garlic powder with parsley
  • 1 teaspoon basil, dried
  • 1 teaspoon oregano
  • - salt and pepper to taste
  • 2 cups ricotta cheese
  • 1 cup cream cheese, room temperature
  • 1/2 cup parmesan cheese
  • 1 package mozzarella cheese, shredded
  • 1 can your favorite spaghetti sauce
  • 1 teaspoon horseradish (sold in dairy area in a jar, not the white sauce)

How To Make my manicotti

  • Step 1
    cook manicotti according to package directions. While that cooks fry all the meats together in a skillet over medium heat. Add salt & pepper, oregano,peppers, onions,and garlic. Drain fat. Let cool.
  • Step 2
    Drain Manicotti, set aside to cool. Meat should be cool enough to put in a food processor and chop to blend.
  • Step 3
    In a mixing bowl add cream cheese, ricotta cheese, 1 tsp garlic powder,basil,1/2 bag of Mozzarella cheese, 1/2 the meat mixture, parmesan cheese,and horseradish. Beat with a mixer on medium speed. Beat eggs in last until well blended.
  • Step 4
    In a sauce pan heat up sauce with the remaining meat mixture. Spread 1/2 the sauce on the bottom of your 13x9x2" baking dish.
  • Step 5
    Stuff cheese mixture into manicotti shells. Place stuffed shells in baking dish. Top shells with remaining sauce.
  • Step 6
    cover and bake at 350^ for 35-40 minutes. Uncover; sprinkle with remaining mozzarella cheese. Bake 10-15 minutes or until cheese is melted. Let stand 10 minutes before serving.
  • Step 7
    * I like to use a package of spinach. thawed and squeeze dried and chopped in the cheese mixture.
