My Manicotti

Sheri Zarnick

I love cooking different dishes, and I made this my own due to my taste. If you don't care for the traditional manicotti, or just want something a little different, give this one a try.

manicotti shells, uncooked
1/2 lb
each of pork sausage, italian sausage, and lean ground beef
1 c
red & green peppers mixed, chopped fine
1 medium
red onion, chopped fine
2 large
2 tsp
garlic powder with parsley
1 tsp
basil, dried
1 tsp
salt and pepper to taste
2 c
ricotta cheese
1 c
cream cheese, room temperature
1/2 c
parmesan cheese
1 pkg
mozzarella cheese, shredded
1 can(s)
your favorite spaghetti sauce
1 tsp
horseradish (sold in dairy area in a jar, not the white sauce)

1cook manicotti according to package directions. While that cooks fry all the meats together in a skillet over medium heat. Add salt & pepper, oregano, peppers, onions, and garlic. Drain fat. Let cool.
2Drain Manicotti, set aside to cool. Meat should be cool enough to put in a food processor and chop to blend.
3In a mixing bowl add cream cheese, ricotta cheese, 1 tsp garlic powder,basil,1/2 bag of Mozzarella cheese, 1/2 the meat mixture, parmesan cheese, and horseradish. Beat with a mixer on medium speed. Beat eggs in last until well blended.
4In a sauce pan heat up sauce with the remaining meat mixture. Spread 1/2 the sauce on the bottom of your 13x9x2" baking dish.
5Stuff cheese mixture into manicotti shells. Place stuffed shells in baking dish. Top shells with remaining sauce.
6cover and bake at 350^ for 35-40 minutes. Uncover; sprinkle with remaining mozzarella cheese. Bake 10-15 minutes or until cheese is melted. Let stand 10 minutes before serving.
7* I like to use a package of spinach. thawed and squeeze dried and chopped in the cheese mixture.
