My Manicotti

I love cooking different dishes, and I made this my own due to my taste. If you don't care for the traditional manicotti, or just want something a little different, give this one a try.

manicotti shells, uncooked
1/2 lb
each of pork sausage, italian sausage, and lean ground beef
1 c
red & green peppers mixed, chopped fine
1 medium
red onion, chopped fine
2 large
2 tsp
garlic powder with parsley
1 tsp
basil, dried
1 tsp
salt and pepper to taste
2 c
ricotta cheese
1 c
cream cheese, room temperature
1/2 c
parmesan cheese
1 pkg
mozzarella cheese, shredded
1 can(s)
your favorite spaghetti sauce
1 tsp
horseradish (sold in dairy area in a jar, not the white sauce)

How to Make My Manicotti


  • 1cook manicotti according to package directions. While that cooks fry all the meats together in a skillet over medium heat. Add salt & pepper, oregano,peppers, onions,and garlic. Drain fat. Let cool.
  • 2Drain Manicotti, set aside to cool. Meat should be cool enough to put in a food processor and chop to blend.
  • 3In a mixing bowl add cream cheese, ricotta cheese, 1 tsp garlic powder,basil,1/2 bag of Mozzarella cheese, 1/2 the meat mixture, parmesan cheese,and horseradish. Beat with a mixer on medium speed. Beat eggs in last until well blended.
  • 4In a sauce pan heat up sauce with the remaining meat mixture. Spread 1/2 the sauce on the bottom of your 13x9x2" baking dish.
  • 5Stuff cheese mixture into manicotti shells. Place stuffed shells in baking dish. Top shells with remaining sauce.
  • 6cover and bake at 350^ for 35-40 minutes. Uncover; sprinkle with remaining mozzarella cheese. Bake 10-15 minutes or until cheese is melted. Let stand 10 minutes before serving.
  • 7* I like to use a package of spinach. thawed and squeeze dried and chopped in the cheese mixture.
