mom's spaghetti sauce

This is a recipe that my mother used to make. I switched out the green bell peppers for red bell peppers as I find the taste mellower and easier to digest. I enjoy a bit of background heat so I used the cayenne or aleppo peppers. I also use my own home canned crushed tomatoes. I sometimes serve it over spaghetti squash instead of noodles.

Ingredients

  • 2 pounds hamburger-lean
  • 2 cups onion
  • 6 ounces tomato paste
  • 11/2 quarts crushed tomatoes
  • 4 - cloves garlic
  • 2 cups water
  • 1 tablespoon sugar
  • 2 teaspoons salt
  • 1/2 teaspoon oregano, dried
  • 1 tablespoon parsley flakes
  • 1 teaspoon basil, dried
  • 1/2 teaspoon thyme, dried
  • 1/2 cup red wine
  • 1/2 cup red bell pepper, dried
  • 1 tablespoon rosemary sprigs
  • - cayenne or aleppo peppers to taste

How To Make mom's spaghetti sauce

  • Step 1
    Brown the hamburger, add the onion and saute until clear. add the garlic and saute until fragrant. Add the red wine, saute until it cooks down and the alcohol evaporates.
  • Step 2
    Add the crushed tomatoes, the tomato paste, and the water. At this point I place everything in a crock pot.
  • Step 3
    Add the spices, salt, sugar, and dried red peppers. Simmer on high for 30 minutes, then set on the low setting for 5-6 hours.
