mediterranean style pesto / olive pizza

My husband and I love this quick and easy main dish. We use prepared items, such as Boboli pizza crust, and prepared Pestso sauce, but you can make your own if you like. If you do make your own crust, you would need to partially cook the crust before adding the topping, since the topping ingredients only need to be heated through, and the cooking time for the crust would probably be more than 10 minutes.

Ingredients

  • 1 large pizza crust
  • 2 tablespoons mayonaise, not miracle whip
  • 1/2 cup pesto sauce
  • 1 medium red onion, thinly sliced
  • 1/2 cup kalamata olives, pitted
  • 2 - roma tomatoes, thinly sliced
  • 6 ounces feta cheese, crumbled
  • 1 cup mozzarella cheese, shredded
  • 2 teaspoons olive oil, extra virgin

How To Make mediterranean style pesto / olive pizza

  • Step 1
    Preheat oven to 425. (If using a pizza stone, preheat it, too. A pizza stone makes the crust more crispy on the bottom side.)
  • Step 2
    If not using a pizza stone, place pizza crust on pizza pan or heavy aluminum foil to catch any drips while in the oven.
  • Step 3
    Spread the mayonaise, evenly, on the top side of the pizza crust. The mayo will keep the pesto from soaking into the crust, to avoid soggy crust.
  • Step 4
    Spread the pesto sauce, evenly, over the mayo.
  • Step 5
    Places rings of onion, sliced tomato, pitted olives, and crumbled feta cheese on top of the pesto layer.
  • Step 6
    Top with shredded mozzarella.
  • Step 7
    Drizzle with extra virgin olive oil.
  • Step 8
    Place in oven and bake until cheese is melted and crust is golden brown, about 10 minutes.
