meatless lasagna rolls
Good, easy way to make lasagna for 4 or less...can easily be doubled. Any of the veggie ingredients can be changed to your own choice. Great with garlic bread and salad. Not my pic

Ingredients
- 8 - - 10 lasagna noodles....if you buy the no cook kind you will still need to cook to soften enough to roll.
- 8 ounces fresh spinach
- 2 cups fresh mushrooms
- 1 cup mozzarella cheese grated
- WHITE SAUCE
- 1/2 cup all purpose flour
- 3 tablespoons butter
- 2 1/2 cups milk
- - bay leaf
- - s/p
- - fresh nutmeg grated
- 1 jar marinara sauce

Step 1Cook lasagna noodles, drain and let cool. Cook the spinach ina tiny amount of water for 2 mins then add the mushrooms and cook another 2 mins.DRAIN REALLY WELL...pressing out all liquid and then chopping roughly. Put all the white sauce ingredients into a saucepan and mix well. Bring to a slow boil, stirring continuously until sauce is thick and smooth. Stir in the bay leaf and fresh nutmeg to taste. Lay out the noodles and spread with marinara sauce, spinach and mushrooms and mozzarella. Roll up and put in baking dish seam side down. Remove bay leaf from white sauce and pour over the pasta, Sprinkle with grated parmesan cheese and bake at 350 until cheese melts and warmed through.
