Ingredients

  • 4 large tomatoes, sliced or wedges
  • 1/3 cup olive oil, extra virgin
  • 1/4 cup red wine vinegar
  • 2 teaspoons parsley flakes
  • 1 teaspoon onion, chopped
  • 1 teaspoon italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon sugar
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic salt
  • 1 dash angostura bitters
  • 2 tablespoons basil, fresh
  • 3/4 teaspoon thyme, dried
  • 3 - scallions, sliced thin

How To Make marinated tomatoes

  • Step 1
    Arrange sliced or wedged tomatoes in a shallow container.
  • Step 2
    Combine remaining ingredients in a small mixing bowl & whisk. Pour over tomatoes. Cover & marinate several hours or overnight for flavors to marry. Enjoy!
  • Step 3
    NOTE: Use different colored tomatoes for a very pretty presentation!
