What started as soup turned into a trip to the ER...I let it simmer and when we returned 1.5 hour later this was in the pan! But!! I think we were all glad it simmered! So yummy

Ingredients

  • 1 can diced tomatoes. (fire roasted when availible)
  • 1 can 14.5oz chicken broth
  • 1 - half and half (fill the empty can of broth with h&h)
  • 1 cup loosely packed basil leaves
  • 1 tablespoon garlic, minced
  • 1 pound hot italian sausage
  • 2 cups cheese tortalini (the precooked type)
  • 2 - carrot, sliced and blanched
  • 3 tablespoons flour
  • 2 tablespoons butter

How To Make mama mia, thatza deliziosa!

  • Step 1
    In large skillet brown sausage, drain off fat and set aside. Wipe out skillet)
  • Step 2
    Add butter and cook tomatoes, basil and garlic for about 3-4 minutes. Transfer mixture to food processor, blender or emulsifier, add flour, and blend well. With tomato mixture out of pan, add chicken broth to pan. Return mixture to broth, mix well and bring to low boil.
  • Step 3
    Add Half and Half and bring back to boil. Then add sausage, tortellini and carrots. Simmer for 20-30 minutes or until thickened.
