I started making this pizza a few weeks ago when I had a lot of tomatoes in the garden ripe at the same time. I also make lot's of pesto. I've been making it at least once every 2 weeks,it's so easy,quick and delicious! You can add any toppings you want,this is just what I had on a particular day and loved it so much. If you don't have a garden,check out your local produce market for great,ripe tomatoes. My family and I LOVE garlic,so I add garlic to the pizza crust,it can be omitted. We also LOVE thin crust,so I use a large baking sheet.

Ingredients

  • CRUST
  • - 1 package fleischman's pizza yeast
  • - 1/4 t. sugar
  • - 3/4 c all purpose flour
  • - 1 t. granulated garlic
  • - 1/2 t. salt
  • PESTO
  • - 1 c fresh basil leaves
  • - 1 t. salt
  • - 1/3 c parmesan cheese
  • - 1/3 c olive oil
  • - 1/3 c pine nuts
  • - 3 garlic cloves,cut in half
  • TOPPING
  • - fresh,ripe,juicy tomatoes,slices
  • - salt,black pepper and dried oregano to taste
  • - parmesan cheese,freshly grated
  • - fresh mozzarella cheese,thinly sliced
  • - 3 garlic cloves,thinly sliced
  • - olive oil

How To Make leanne's pesto pizza

  • Step 1
    Crust: Mix the yeast,sugar and warm water together. Let sit 8 minutes. Combine flour,salt and garlic and mix into liquid ingredients well. let sit until other ingredients are put together(makes putting into the pan easier. Knead a few times in the mixing bowl,just to bring together.
  • Step 2
    Add pesto ingredients in a blender,blend until combined into a thick paste-like consistency.
  • Step 3
    Grease a large pizza pan or cookie sheet. With fingers,spread pizza dough into corners of the pan. Spread with pesto,sprinkle with both cheeses,tomatoes,garlic and seasonings. Bake 10 mins. Sprinkle with olive oil.
