This is one of my Great Aunt Mary's recipes. She was an amazing cook! Everything she made was so delicious! We always looked forward to going to her house for a visit!

Ingredients
- 4 cups thinly sliced zucchini
- 1 cup chopped onion
- 3 tablespoons butter
- 1/2 cup chopped parsley
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon basil, dried
- 1/4 teaspoon oregano, dried
- 2 - eggs, beaten
- 2 cups shredded mozzarella
- 1 - unbaked pie crust
How To Make italian zucchini pie

Step 1Cook zucchini and onion in butter for 10 minutes.

Step 2Stir in parsley, salt, pepper, garlic powder, basil and oregano.

Step 3In a separate bowl, combine beaten eggs with mozzarella cheese.

Step 4Stir in zucchini mixture.

Step 5Pour vegetable mixture into unbaked crust.

Step 6Bake in preheated 375 degree oven for 20 minutes or until the center is set.

Step 7Let stand 10 minutes before serving.
