This is one of my Great Aunt Mary's recipes. She was an amazing cook! Everything she made was so delicious! We always looked forward to going to her house for a visit!

thinly sliced zucchini
1 c
chopped onion
3 Tbsp
1/2 c
chopped parsley
1/2 tsp
1/2 tsp
1/4 tsp
garlic powder
1/4 tsp
basil, dried
1/4 tsp
oregano, dried
eggs, beaten
2 c
shredded mozzarella
unbaked pie crust

How to Make Italian Zucchini Pie


  • 1Cook zucchini and onion in butter for 10 minutes.
  • 2Stir in parsley, salt, pepper, garlic powder, basil and oregano.
  • 3In a separate bowl, combine beaten eggs with mozzarella cheese.
  • 4Stir in zucchini mixture.
  • 5Pour vegetable mixture into unbaked crust.
  • 6Bake in preheated 375 degree oven for 20 minutes or until the center is set.
  • 7Let stand 10 minutes before serving.
