This is one of my Great Aunt Mary's recipes. She was an amazing cook! Everything she made was so delicious! We always looked forward to going to her house for a visit!

  • 4 c
    thinly sliced zucchini
  • 1 c
    chopped onion
  • 3 Tbsp
    butter
  • 1/2 c
    chopped parsley
  • 1/2 tsp
    salt
  • 1/2 tsp
    pepper
  • 1/4 tsp
    garlic powder
  • 1/4 tsp
    basil, dried
  • 1/4 tsp
    oregano, dried
  • 2
    eggs, beaten
  • 2 c
    shredded mozzarella
  • 1
    unbaked pie crust

How to Make Italian Zucchini Pie

Step-by-Step

  1. Cook zucchini and onion in butter for 10 minutes.
  2. Stir in parsley, salt, pepper, garlic powder, basil and oregano.
  3. In a separate bowl, combine beaten eggs with mozzarella cheese.
  4. Stir in zucchini mixture.
  5. Pour vegetable mixture into unbaked crust.
  6. Bake in preheated 375 degree oven for 20 minutes or until the center is set.
  7. Let stand 10 minutes before serving.
