This is a nice comforting soup on those cold winter nights.

Ingredients

  • 1 pound italian sausage
  • 1 large onion, chopped
  • 4 ounces mushrooms, sliced
  • 3 cloves garlic, minced
  • 3 large red potatoes, diced
  • 1 can cannellini beans, drained and rinsed
  • 1 can petite diced tomatoes with basil and oregano
  • 1 package frozen spinach, thawed and drained of excess water
  • 1 package frozen cheese tortellini (about 9 oz.)
  • 1 package beef broth (about 15 ounces)
  • - salt and pepper, to taste
  • - italian seasoning, to taste

How To Make italian rustic soup

  • Step 1
    Combine onion, potatoes, and sausage in large skillet and cook over medium heat until sausage is no longer pink. Season with salt, pepper and italian seasoning.
  • Step 2
    Add minced garlic, beans, tomatoes and mushrooms and cook for about 5 minutes.
  • Step 3
    Add broth to a slow cooker and contents of the skillet. Cook on low heat for about 4 hours. Add the spinach and tortellini and let cook for about 30 more minutes. Garnish with parmesan cheese, if desired.
