Italian Rustic Soup
Ingredients

1 lbitalian sausage

1 largeonion, chopped

4 ozmushrooms, sliced

3 clovegarlic, minced

3 largered potatoes, diced

1 can(s)cannellini beans, drained and rinsed

1 can(s)petite diced tomatoes with basil and oregano

1 pkgfrozen spinach, thawed and drained of excess water

1 pkgfrozen cheese tortellini (about 9 oz.)

1 pkgbeef broth (about 15 ounces)

How to Make Italian Rustic Soup
- Combine onion, potatoes, and sausage in large skillet and cook over medium heat until sausage is no longer pink. Season with salt, pepper and italian seasoning.
- Add minced garlic, beans, tomatoes and mushrooms and cook for about 5 minutes.
- Add broth to a slow cooker and contents of the skillet. Cook on low heat for about 4 hours. Add the spinach and tortellini and let cook for about 30 more minutes. Garnish with parmesan cheese, if desired.
