italian sausage
1 large
onion, chopped
4 oz
mushrooms, sliced
3 clove
garlic, minced
3 large
red potatoes, diced
1 can(s)
cannellini beans, drained and rinsed
1 can(s)
petite diced tomatoes with basil and oregano
1 pkg
frozen spinach, thawed and drained of excess water
1 pkg
frozen cheese tortellini (about 9 oz.)
1 pkg
beef broth (about 15 ounces)
salt and pepper, to taste
italian seasoning, to taste

How to Make Italian Rustic Soup


  • 1Combine onion, potatoes, and sausage in large skillet and cook over medium heat until sausage is no longer pink. Season with salt, pepper and italian seasoning.
  • 2Add minced garlic, beans, tomatoes and mushrooms and cook for about 5 minutes.
  • 3Add broth to a slow cooker and contents of the skillet. Cook on low heat for about 4 hours. Add the spinach and tortellini and let cook for about 30 more minutes. Garnish with parmesan cheese, if desired.
