Ingredients

  • 2 cups rice, white or brown
  • 4 cups water
  • 2 links italian sausage, sweet, no casing
  • 1 pound ground turkey
  • 1 large onion, chopped
  • salt & pepper, to taste
  • 1 - 16 oz cans tomato sauce, no-salt added
  • 6 x large egg whites
  • 1/2 can pecorino ramano cheese
  • 1/4 cup bread crumbs, seasoned
  • 1 1/4 cups mozzarella cheese, shredded

How To Make italian rice casserole

  • Step 1
    Cook rice in water according to package directions. Set aside to cool.
  • Step 2
    Meanwhile, sauté sausage meat; cook until brown breaking up into pieces with a wooden spoon as it cooks. Add turkey & onions & cook until browned, breaking up as it cooks. Season with salt & pepper to taste, then add 8 oz tomato sauce & simmer on low, covered, 20 minutes.
  • Step 3
    Preheat oven to 400 degrees F. In a large bowl combine rice, pecorino romano, eggs & 4 oz tomato sauce & mix well. Rice should be a bit sticky.
  • Step 4
    Spray a 11" x 14" casserole dish with cooking spray, making sure to spray sides too. Add 2 tbsp breadcrumbs to the dish & roll around to coat the bottom & sides.
  • Step 5
    Take 1/2 of the rice mixture (a little more if needed) & cover the bottom of the dish & up the sides; press to form the bottom layer.
  • Step 6
    Add the meat.
  • Step 7
    Sprinkle mozzarella on top. Top with remaining rice & press until even. Top with remaining 4 oz of sauce, remaining 2 tbsp breadcrumbs & remaining mozzarella.
  • Step 8
    Cover with foil & bake 20 minutes. Remove foil & bake 10 more minutes. Cut into 8 pieces.
